The other day I was left with some boiled potatoes. That rarely happens… But it did. Lucky me. I remembered a salad I used to eat at one of my jobs. There was a little bistro that offered two or three hot meals a day and then they had a continues selection of quesadillas and salads. One being a red pepper potato salad. We loved it. It was often sold out but when we snatched one it was a good day. I loved it so much that at one time I asked for the recipe and the willingly shared. I made it a couple times but then forgot. Until the other day… And I really wonder why I don’t do it much more often. It is such a good salad and a different kind of potato salad as it needs no mayonnaise or yoghurt. So here it is:
Ingredients for Red Pepper Potato Salad
- 2 cups boiled potatoes either small ones halved or some chunks of same size
- 1 cup red pepper – you could use other colors but I believe these look best and are not as sweet (yellow) or bitter (green)
- 1/4 cup of cut scallions
- olive oil – more than you think
- paprika / capsicum powder
- salt
As you can see this is a rather simple salad when it comes to ingredients. But don’t let that fool you. It is very rich in flavors.
How to prepare the Red Pepper Potato Salad
It is rather simple and writing it down is almost not necessary but here we go.
- Boil potatoes and let cool.
- Add salt and paprika powder until potatoes are coated.
- Cut red pepper and scallions.
- Toss all together with potatoes
- Add generous amount of olive oil. It should be well coated.
- Serve cooled.
You could combine olive oil, paprika and salt beforehand but I don’t see much difference. However in these images there is not enough paprika. Potatoes should look more reddish. I may have to do it again during my summer salad challenge.
This salad can be eaten on its own as it is rather filling. But I am sure you can serve it on a BBQ as well, pair it with meats or even fish.

That looks delicious, but I know my daughter won’t touch it because she hates bell peppers of any kind. I will admit that my favorite is a nice sweet red bell pepper for salads, but I love using green peppers for any kind of savory cooking. I may just need to make a bit for just me, myself, and I sometime. I love every single ingredient.
Your daughter and my husband both. I could not serve him this salad. He also hates any kind of onion. The amount of ingredients is for about 1-2 people probably more one person. Or at least I like to eat a lot.

That looks delicious! Maybe we will have bbq this week, and I can make this as a side. My husband is low carb so doesn’t eat many potatoes, but he would have a small serving.

Oh goodness, I know. My poor husband. Middle age has made our meal planning a lot more complicated. He is borderline diabetic, even at a healthy weight and on medication, thus the low carb. His tummy no longer does well with most cow dairy, though he can have goat or sheep milk cheeses, and a type of milk they sell called A2 without milk proteins. I know he misses a good cheesy, carb laden pizza sometimes.

I love potatoes , though I don’t love potato salad with mayo, so this looks really appealing to me. So simple too. My husband doesn’t like potatoes (aside from French fries), so we don’t have them too much. As for me, I could just happily eat a boiled potato simply sprinkled with salt. There’s something hearty and comforting about that.
How can you not like potatoes? Seriously I’d take them over pasta any day. Maybe you get the chance to try this.
